By popular demand (ok, my daughter asked for this recipe so she can make some today), today's recipe is for Chocolate Chip Cookies.
The wonderful woman that took care of my daughter when she was little has a son that my daughter nicknamed Stinky. The two of them would make these cookies together (it was a great math lesson for a pre-school kid!)
And so, without further explanation, the recipe:
Stinky’s Chocolate Chip Cookies
1 ½ cups shortening (butter flavored Crisco is good)
1 ½ cups sugar
¾ cup brown sugar
3 eggs (or equivalent egg substitute)
1 tsp vanilla (we like the taste of Mexican vanilla with chocolate)
2 ¼ cups flour
1 ½ tsp soda
1 ½ tsp salt
3 cups oatmeal (old fashion rolled oats)
4 cups chocolate chips
Cream shortening and sugars until smooth
Add eggs and vanilla, mix well
Combine flour soda and salt and add gradually to mixture
Stir in oatmeal
Fold in chips
Drop on greased cookie sheets
Bake at 375 degrees for 12 to 15 minutes, or to desired doneness
This makes about 6 dozen medium sized cookies
Great served warm with a big glass of cold milk!
